CHOCOLATE & MASALA MILK CHIA PUDDING PARFAIT

Get your hands on chia seeds now if you can. If you already have, pat yourself on the back. I learnt about this particular ingredient not so long ago. Native to Central and South America, these tiny seeds are powerful & excellent of source of natural and plant based proteins, omega 3 fatty acids, antioxidants, fiber, calcium and much more. Their appearance may be tiny but they will surprise you with the amount of liquid they can absorb. And they are so easy to include in your breakfast meal since all you need to do is soak them in milk or any liquid of your choice overnight and the next morning your breakfast is read! Isn’t that wonderful and perfect for hectic weekday mornings. You get a fix of healthy breakfast without any effort. What more can you ask for?!

This pudding can be enjoyed for dessert or snack but I would love to start my day with this lovely flavourful parfait. The colors make me happy and my taste buds sing with joy! Since I was planning to post this for Valentine’s Day, how could I not add chocolate to them.

So all you savoury breakfast lovers out there give a shot to this breakfast option and your body will love you for doing so.

2 cups Dairy Milk or Non Dairy Milk (Almond or Coconut)

¼ C plus ¼ C Chia Seeds

2 – 3 tsp Doodh Masala

3 tbsp Cocoa Powder

3 tbsp Agave Syrup (or sugar / honey / maple)

Heat one cup of milk and add the masala to it. Keep heating on low flame for 5 minutes (stirring once in a while to prevent masala from catching at the bottom). Remove from heat. Set aside and allow the milk to cool down.

Stir in one tbsp agave syrup and add ¼ cup of chia seeds. Stir them and set aside for 10 minutes.

In another bowl, pour the remaining one cup milk and whisk in the cocoa powder. Now add 2 tbsp agave (adjust to taste) and add ¼ cup chia seeds. Stir them well and set aside for 10 minutes.

After 10 minutes, stir both the mixtures with a spoon till there are no lumps.

Keep the bowls separately in the refrigerator for 4 – 5 hours or preferably over-night.

In the morning, stir the contents again.

Take glasses or bowls in which you intend to serve the pudding and transfer a few teaspoons of chocolate chia, followed by masala milk chia.

Top with fruits and nuts of your choice. Enjoy this delicious glass of goodness and health. Cheers!

Note: You may need to adjust the amount of chia seeds depending on what kind of milk you are using and what consistency you prefer.

  1. Chia seeds are related to tulsi (indian holy basil) and to the Italian basil. So falooda seeds which are basil seeds do the same thing as chia seeds when you keep them in contact with liquids.
    I wish I had your amazing pudding parfait right now, it’s just perfect looking. Gone to check out your dhood masala now. =D
