The only way my daughter enjoys eating nuts is when I serve them caramelised. She and I are diametrically opposite in our tastes and personalities. I love eating nuts and fruits and she avoids them like plague! I have to virtually threaten her to eat fruits. We had caramelised nuts at a restaurant and when I saw her demolishing them with utter delight, I knew I had found solution to the ‘nut’ problem.
This time around, my caramel happened to thicken more than I had intended it to be and this lead to a sugary coating on the nuts which my daughter enjoyed nonetheless. But I prefer them with lesser amount of sugar. The first time I tried them, I made them with honey and although they were tasty but they were also sticky and were not crunchy. Next time I made with caramel coating and when they cooled, they were sweet as well as crunchy. Making these is simple and they can be enjoyed with pre-dinner drinks and as a snack. You will need,
2 tsp Butter
2 tbsp Water
2 tbsp Brown Sugar
¼ tsp Red Chili Powder
A pinch of Salt
1 tsp Sesame Seeds (I used black)
1 Cup Walnuts
Line a baking sheet with parchment paper or aluminium foil. Set aside. Set the oven to heat at 170 degrees.
Meanwhile, melt and bring to boil – butter, water, brown sugar, sugar and salt. Cook till syrupy consistency is achieved. Add sesame seeds and walnuts and cook further till the syrup thickens and coats the walnuts well. Take them off the heat and place them in a single layer over the baking sheet and bake at 170 degrees C for twenty minutes, flipping them once in between, till the coating begins to dry and the walnuts are toasted.
Note: In case you wish to have a mild sweet taste ensure that the caramel is not too thick otherwise it will heavily coat the walnuts (when you remove them for baking) leading to a sugar coating.
Note: You can use pecans, almonds, pistachio or any nuts that you prefer.

Note: The toasting time might vary a little depending on the thermostat of your oven.

I love caramelized nuts. Will have to try this out soon as I never realised how simple it is to make! 🙂
Hi Nish, these are definitely simple to make apart from the caramel bit which is a bit tricky!
This is such a delightful snack & I could finished the entire stack by myself. Which also explains why I’m down with a terrible throat now :<
Been snacking too much over the CNY. This nutty snack is just so cool!
ya..this is the best way to make the kids eat nuts….superb..
These do look like a wonderful snack. I like that you also included sesame seeds, which is a bit different from most of the recipes you see. It is a great idea to make this at home-I am sure it tastes a lot better than store bought and is probably a lot cheaper. You pictures do tempt-yum!
Sounds delicious! I love candied nuts, but have never had a sesame variety.
Just amazing! Great presentation!
Nice recipe for kids as they happened to love anything caramel. Thanks for posting it!
What an amazing snack!! I would crush it and put it on top of vanilla ice cream. YUM! Have a great week! ~ Ramona
You are right Ramona…they are great accompaniment to ice cream & not just ice cream! They compliment smoothies and they can be sprinkled over cake, muffins, in salads and over desserts too!

Mmmmm…that looks so good to munch on!
Oh yum! Funny, that’s what my kids say about eating fruit!
What we mothers have to do to make our children eat what they must! I have some stories of my own about this issue. But sometimes their ‘pickiness’ is just an incentive to creat something beautiful just like you did in this case.
Anything with caramel,,,I’m a big fan these looks crunchy sweet and Yummy :0
